These blending modes are for smoothies, frozen desserts, soups, and purees. The last blending mode is not, in fact, a blending mode but a cleaning mode. So it can blend warm water and soap to get rid of any food residue and odor from inside the container. And you can use this as many times as you blend something sticky or creamy in the blender.
The Vitamix 7500 comes with a simple but effective 10-speed variable dial and pulse switch. The versatile speeds are multi-functional enough to take care of blending smoothies, frozen desserts, soup, and other recipes.

Even though there’s always the risk of the touchscreen not working after a while. But I’ve seen no such complaints as far as the Vitamix 780 is concerned.
Both blenders are quick and easy to use. But the 780 seems to be doing a better job of programmability with its 5 blending modes, 10 variable speeds, and the Pulse feature all accessible via its touchscreen display.
Vitamix 7500 vs 780: Similarities

Though the 780 has a few blending modes which the Vitamix 7500 doesn’t, they both offer 10 variable speeds for making a wide variety of recipes quickly and effectively.

I can say, for certain, that you’ll find both the 7500 and 780’s blender jar more user-friendly and portable to use.
